Steamed Hainanese chicken rice using instant pot

Ingredients
Chicken marinade ingredients
- 1 whole chicken
- 3 tbsp oyster sauce
- 2 tbsp cooking wine (optional)
- 1 tbsp sesame oil
- 4 tsp salt
- 1 tsp pepper
- 1 tsp flavor enhancers (optional)
- 2 tbsp sliced ginger
- 3 tbsp cornstarch
Other ingredients
- 800 ml / 650 g rice
- 800 ml water (or 400 ml water and 400 ml chicken stock)
- 5 tbsp cooking oil
- 1 whole garlic
- 2 green onions
Instructions
- Chop the chicken into little pieces, set aside in a bowl
- Mince the garlic
- Heat the oil, sauté the garlic until it turns golden
- Slice the ginger into matchsticks. Add to the chicken.
- Add cornstarch, oyster sauce, salt, flavor enhancers, and pepper. Mix well and marinate for 15-30 minutes
- Add rice and water into the rice cooker
- Add the sauteed garlic
- Add marinated chicken on top, do not stir. Cook chicken rice until done.
- Chop the green onion and mix well with rice.
- Steamed Hainanese Chicken Rice is ready to serve
