Cooking Steps

  1. Marinate the beef and mushrooms: Put the beef and shiitake mushrooms into a bowl and mix with 1 clove minced garlic, 1 tsp sugar, ¼ tsp ground black pepper, 2 tsp soy sauce, and 1 tsp sesame oil. Cover and refrigerate.
  2. Make the egg garnish (jidan): Separate the egg yolk from the white. Remove the chalaza. Beat yolk with a pinch of salt. Heat a thin layer of oil in a non-stick pan, turn off heat, pour in yolk mixture, and tilt to spread thin. Let cook 1 minute in residual heat, flip, and let sit 1 more minute. Set aside.
  3. Prepare the noodles and vegetables:
    1. Blanch spinach 30 sec–1 min, rinse in cold water, squeeze dry. Season with 1 tsp soy sauce and 1 tsp sesame oil. Place in a large mixing bowl.
    2. Boil noodles 8 minutes, stirring after the first minute. Strain, cut with scissors, and toss with 2 tsp sesame oil, 1 tsp soy sauce, and 1 tsp sugar. Add to the bowl.
    3. Stir-fry onion and green onion with oil and a pinch of salt for 2 minutes; add to bowl.
    4. Stir-fry white mushrooms with oil and salt for 2 minutes; add to bowl.
    5. Stir-fry carrot 20 sec, then add bell pepper and stir-fry another 20 sec; add to bowl.
    6. Stir-fry marinated beef and mushrooms until beef is cooked through and mushrooms are shiny; add to bowl.
  4. Mix and serve: Add 1 minced garlic clove, 1 tbsp soy sauce, 1 tbsp sugar, ½ tsp ground black pepper, and 2 tsp sesame oil to the mixing bowl. Mix everything together by hand. Add the egg garnish and 1 tbsp sesame seeds, mix, then transfer to a large plate.
